3 Quick & Easy Appetizer Recipes That Will Leave Your Friends Drooling

Bacon Wrapped Pickles with Ranch Dip

Everybody knows that bacon makes everything better. But what if I told you there was a way to make bacon even better? Think fried pickles, only healthier! Yes, these bacon-wrapped pickles will have your friends drooling bite after bite. 

Ingredients: 

Directions

  1. Cut slices of bacon in half. Wrap a bacon slice around a pickle spear so that the pickle is covered.
  2. Once all pickles have been wrapped, sprinkle them with BBQ seasoning of your choice and place on the grill or in your air fryer.
  3. Grill until bacon is cooked and crispy, about 15 minutes.
  4. Dip pickles in Ranch Dip and enjoy!

Shrimp with Cocktail Sauce

Not much of a cook? That’s ok! Bring the shrimp with cocktail sauce. Ingredients: 

  • 2 lb shrimp, deveined
  • A large bowl filled with ice
  • 2 tbsp. Salt
  • 6 cups of water
  • ½ small onion, peeled and loosely chopped
  • 1tbsp. Fresh parsley
  • 1 lemon cut
  • 1 jar of Primal Kitchen Cocktail Sauce

Directions: 

  1. In a large pot, combine water, salt, onion, parsley, and juice from the lemon.
  2. Bring the water to a boil, then turn off the heat.
  3. Add the shrimp to the pot and let them sit for about three to four minutes or until pink.
  4. Remove the shrimp and place them into the bowl of ice.
  5. Serve the shrimp with Primal Kitchen Cocktail Sauce.

Mini Pumpkin Pies

This one is for a friend with a sweet tooth, and really, is it even Friendsgiving without pumpkin pie?

For the crust: 

  • 2 cups raw pecans
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup real maple syrup
  • 2 tablespoons coconut oil
  • 1/4 teaspoon kosher sea salt

For the Filling: 

  • 1 15-ounce can of pumpkin puree (2 cups)
  • 1/2 cup coconut milk cream; scoop the cream from the top of the can
  • 1/2 cup real maple syrup
  • 2 eggs + 1 egg yolk
  • 1 teaspoon ground cinnamon
  • 1.5 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher sea salt

Directions: 

  1. Preheat oven to 350 degrees F. Line a 12-cup muffin pan with cupcake liners (you can use paper or silicone liners) + 4 cups of a second pan (or work in batches since the recipe makes 16 mini pies in total).
  2. In a food processor, combine; pecans and coconut and pulse back and forth until they have broken down. You want to have a consistency similar to sand that sticks together when pinched between your fingers. Be careful not to over-mix, or you will end up with nut butter.
  3.  Add in the maple syrup, coconut oil, and sea salt. Pulse again until everything is well combined.
  4. Divide the nut mixture as evenly as possible between all sixteen cups, and then use your fingers to pat it down in each cup to form a crust for each mini pie. Set aside.
  5. In a large bowl, combine pumpkin puree, coconut milk/cream, maple syrup, eggs, egg yolk, cinnamon, pumpkin pie spice, vanilla extract, and sea salt. Use a hand mixer to mix until everything is well combined.
  6. Divide the filling as evenly as possible between all 16 muffin cups.
  7. Pop into the oven for 30 minutes or until set through. Cool completely and then transfer into an airtight container and refrigerate for a minimum of 6 hours.
