  • Step One: Cook your protein – this could be something like baked salmon or grilled chicken. 
  • Step Two: Roast veggies like broccoli or kale – don’t be afraid to get creative here! 
  • Step Three: The third step in the process is washing greens such as spinach, arugula, or romaine lettuce. 
  • Step Four:  Pick out a sauce for your new healthy dinner recipe – olive oil and lemon juice make a great option or use one of these delicious Primal Kitchen sauces. 
  • Step Five: Put it all together and enjoy!

Healthy Dinner Recipes You Can’t Live Without

Looking for a healthy dinner recipe that’s fast, easy, and loved by everyone in the family? This sheet pan chicken fajitas dinner is definitely the answer to your culinary prayers! Not only does it check off all the classic ingredients for a great fajita night, but it’s also so simple to prepare. All you have to do is preheat the oven, chop up some veggies, season your chicken, and pop it into the oven. It’s truly one of those no-mess, no-fuss recipes that will make dinner time less stressful and more flavorful.

Spice Blend

  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Chicken

Instructions 

  1. Preheat your oven to 400 degrees Fahrenheit. Mix the spice blend together in a small bowl.
  2. In another bowl, toss the peppers and onions with 1 tablespoon of oil and about a third of the spice blend. Spread the veggies out on one side of a large sheet pan.
  3. In the same bowl, add the chicken thighs and toss them in the remaining oil and spice blend. Lay the chicken out on the other side of the sheet pan.
  4. Place the sheet pan in the oven and roast for about 40-45 minutes, flipping the chicken and tossing the veggies once halfway through. Shred or chop your chicken after it cools slightly.
  5. Arrange your chicken, peppers and onions, and fixings in the pan. Serve in lettuce cups or tortillas, and enjoy!

  1. Steam cauliflower for 3-5 minutes in the microwave (if it’s in a steamable bag, follow directions on the back of the bag)
  2. Break cooked salmon into pieces with a fork and add on top of cauliflower rice
  3. Add kimchi to the bowl
  4. Drizzle Teriyaki sauce and mix to coat evenly
  5. Add avocado and sesame seeds to bowl
  6. Top with mayo and sriracha sauce
  7. Fill seaweed sheet with bowl mixture and enjoy!
